Ingredients

  • 1.5 cups long-grain white rice
  • 2 tbsp olive oil
  • 1/2 yellow onion, finely diced
  • 2 garlic cloves, minced
  • 3 cups vegetable broth
  • 1/2 tsp ground turmeric
  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 1 bay leaf
  • 1/2 cup frozen peas, thawed

Instructions

    Heat 2 tbsp olive oil in a medium saucepan. Add 1/2 finely diced yellow onion and cook 3-4 minutes until softened.

    Add 2 minced garlic cloves, then 1.5 cups long-grain white rice. Stir and toast 2 minutes.

    Stir in 1/2 tsp ground turmeric and 1/2 tsp ground cumin to coat the rice.

    Pour in 3 cups vegetable broth and add 1/2 tsp salt and 1 bay leaf. Boil, then cover on lowest heat.

    Cook covered 18 minutes. Off heat, scatter 1/2 cup thawed frozen peas on top and cover 5 minutes.

    Remove bay leaf, fluff with a fork, and serve.
