Southern Green Beans with Salt Pork

- 1/2 lb salt pork, diced
- 1/2 yellow onion, chopped
- 2 garlic cloves, minced
- 2 lbs fresh green beans, trimmed
- 2 cups chicken broth
- 1 cup water
- 1/2 tsp black pepper, freshly grnd

In a large pot or Dutch oven, add 1/2 lb diced salt pork over medium heat. Cook, stirring occasionally, until the fat is rendered and the pork is crispy, about 8-10 minutes. Remove the crispy pork bits with a slotted spoon and set aside, leaving the rendered fat in the pot.

Add 1/2 chopped yellow onion to the pot with the rendered fat and cook until softened, about 3-5 minutes. Add 2 minced garlic cloves and cook for another minute until fragrant.

Stir in 2 lbs trimmed fresh green beans, 2 cups chicken broth, 1 cup water, and 1/2 tsp freshly grnd black pepper. Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 20-25 minutes, or until the fresh green beans are tender.

Stir in the reserved crispy salt pork bits. Taste and adjust seasoning with additional salt and pepper if needed. Serve hot.
