Spicy Poached Chicken Salad
Tender poached chicken breasts served over crisp julienned cucumbers, dressed in a savory chili oil sauce.
Ingredients
- 1.5 lbs chicken breast, boneless
- 1 inch ginger, sliced
- 4 stalks scallion, chopped
- 2 Persian cucumber, julienned
- 2 tbsp chili oil
- 2 tbsp soy sauce
- 1 tbsp Chinese black vinegar
- 3 garlic cloves, minced
- 1 tsp toasted sesame oil

Place 1.5 lbs boneless chicken breast, 1 inch sliced ginger, and half of the 4 stalks chopped scallion in a pot of water over medium-high heat.

Bring water to a simmer, lower heat, cover, and gently cook for 10-12 minutes until chicken reaches an internal temperature of 165F.

Transfer chicken to an ice bath, cool completely, and shred into bite-sized strips.

In a small bowl, whisk together 2 tbsp chili oil, 2 tbsp soy sauce, 1 tbsp Chinese black vinegar, 3 minced garlic cloves, and 1 tsp toasted sesame oil.

Arrange 2 julienned Persian cucumber on a serving platter, top with shredded chicken, pour sauce over top, and garnish with remaining scallion.
