Stir Fried Garlic Bok Choy
A simple, quick Chinese side dish of tender-crisp bok choy stir fried in a blazing hot wok with garlic, a splash of soy sauce, and sesame oil for a clean, savory finish.
Ingredients
- 2 lbs baby bok choy (or regular bok choy, halved), ends trimmed, halved lengthwise
- 6 cloves garlic cloves, thinly sliced
- 2 tbsp vegetable oil
- 2 tsp soy sauce
- 2 tsp oyster sauce (or vegan oyster sauce)
- 1 tsp toasted sesame oil
- 1/4 tsp kosher salt
- 3 tbsp water
Instructions
-
1
Wash 2 lbs ends trimmed, halved lengthwise baby bok choy (or regular bok choy, halved) thoroughly and pat dry. Have all remaining ingredients ready before starting, as this dish cooks very fast.
-
2
Heat 2 tbsp vegetable oil in a wok or large skillet over the highest heat possible until the oil shimmers and just begins to smoke.
-
3
Add 6 cloves thinly sliced garlic cloves and stir fry for 15 seconds until golden and fragrant. Do not let it burn.
-
4
Add the bok choy and toss immediately. Stir fry over high heat for 1 minute.
-
5
Add 3 tbsp water to the wok. Continue stir frying for another 1-2 minutes until the stalks are tender-crisp and the leaves are wilted.
-
6
Season with 2 tsp soy sauce, 2 tsp oyster sauce (or vegan oyster sauce), and 1/4 tsp kosher salt. Toss to combine.
-
7
Remove from heat, drizzle with 1 tsp toasted sesame oil, and serve immediately.
