Ingredients

  • 2 lbs baby bok choy (or regular bok choy, halved), ends trimmed, halved lengthwise
  • 6 cloves garlic cloves, thinly sliced
  • 2 tbsp vegetable oil
  • 2 tsp soy sauce
  • 2 tsp oyster sauce (or vegan oyster sauce)
  • 1 tsp toasted sesame oil
  • 1/4 tsp kosher salt
  • 3 tbsp water

    Wash 2 lbs ends trimmed, halved lengthwise baby bok choy (or regular bok choy, halved) thoroughly and pat dry. Have all remaining ingredients ready before starting, as this dish cooks very fast.

    Heat 2 tbsp vegetable oil in a wok or large skillet over the highest heat possible until the oil shimmers and just begins to smoke.

    Add 6 cloves thinly sliced garlic cloves and stir fry for 15 seconds until golden and fragrant. Do not let it burn.

    Add the bok choy and toss immediately. Stir fry over high heat for 1 minute.

    Add 3 tbsp water to the wok. Continue stir frying for another 1-2 minutes until the stalks are tender-crisp and the leaves are wilted.
