Spinach Soup
A classic silky spinach soup prepared with butter, flour roux, milk, and tender fresh leaves. Lightly seasoned with nutmeg for a warm and velvety finish.
Ingredients
- 10 oz fresh spinach leaves, chopped
- 2 tbsp unsalted butter
- 1 small yellow onion, diced
- 2 tbsp all-purpose flour
- 4 cups vegetable broth
- 1 cup whole milk
- 1 tsp salt
- 1/4 tsp black pepper, ground
- 1 pinch ground nutmeg

Melt 2 tbsp unsalted butter in a pot over medium heat and sauté 1 small diced yellow onion for 4 minutes until translucent.

Sprinkle in 2 tbsp all-purpose flour and cook while stirring for 1 to 2 minutes until lightly golden.

Gradually whisk in 4 cups vegetable broth and 1 cup whole milk to form a smooth broth.

Stir in 10 oz chopped fresh spinach leaves, 1 tsp salt, 1/4 tsp ground black pepper, and 1 pinch ground nutmeg.

Simmer for 10 minutes until the spinach is tender, then blend until smooth and serve warm.
