Toad in the Hole
Traditional British dish with sausages baked in a puffy Yorkshire pudding batter, served with onion gravy.
Ingredients
- 8 pork sausages
- 3 large eggs
- 3/4 cup all-purpose flour
- 3/4 cup whole milk
- 1/4 tsp salt
- 1/8 tsp black pepper
- 3 tbsp vegetable oil
- 1 yellow onion, sliced
- 1 cup beef broth
- 1 tsp cornstarch
- 2 tbsp water
- 1 tbsp butter

Preheat oven to 425°F. Place a 9x13 baking dish with 3 tbsp vegetable oil in the oven for 5 minutes to heat.

Meanwhile, make the batter: whisk together 3 large eggs, 3/4 cup all-purpose flour, 3/4 cup whole milk, 1/4 tsp salt, and 1/8 tsp black pepper until smooth. Let rest for 5 minutes.

Carefully add 8 pork sausages to the hot baking dish, then quickly pour batter over them.

Bake for 25-30 minutes until the batter is puffed and golden brown.

While batter bakes, make onion gravy: melt 1 tbsp butter in a pan and cook 1 sliced yellow onion until soft and golden, about 8 minutes.

Pour in 1 cup beef broth, mix 1 tsp cornstarch with 2 tbsp water, and stir into the gravy.

Simmer for 3-4 minutes until thickened.

Serve toad in the hole hot with onion gravy.
