Victoria Sponge Cake
Two light, airy sponge cakes sandwiched together with sweet jam and cream. Finished with a delicate dusting of powdered sugar.
Ingredients
- 1 cup unsalted butter, softened
- 1 cup caster sugar
- 4 large eggs, beaten
- 2 cups self-raising flour, sifted
- 6 tbsp raspberry jam
- 1 cup heavy cream, whipped
- 2 tbsp powdered sugar

Preheat oven to 375F (190C) and grease two 8-inch round cake pans.

Cream 1 cup softened unsalted butter and 1 cup caster sugar together in a large bowl until pale and fluffy.

Gradually add 4 beaten large eggs to the mixture, beating well after each addition.

Fold in 2 cups sifted self-raising flour gently until smooth.

Divide batter evenly between pans and bake for 20 minutes until golden and springy.

Cool completely, then spread 6 tbsp raspberry jam and 1 cup whipped heavy cream over one sponge layer.

Top with the second sponge layer and dust with 2 tbsp powdered sugar.
