Vinegret
A traditional chilled vegetable salad featuring boiled root vegetables, tangy pickles, and sauerkraut tossed in a simple oil dressing.
Ingredients
- 2 medium red beets, diced
- 2 medium Yukon Gold potatoes, diced
- 2 medium carrots, diced
- 3 medium dill pickles, diced
- 1 cup sauerkraut, drained
- 1/2 small red onion, minced
- 3 tbsp unrefined sunflower oil
- 1 tbsp apple cider vinegar
- 1/2 tsp salt
- 1/4 tsp black pepper

Boil 2 medium red beets, 2 medium Yukon Gold potatoes, and 2 medium carrots in separate pots until fork-tender, then cool, peel, and dice them into equal small cubes.

Toss 2 medium diced red beets with half of the 3 tbsp unrefined sunflower oil in a small bowl to coat and prevent color bleeding.

In a large mixing bowl, combine 2 medium diced Yukon Gold potatoes, 2 medium diced carrots, 3 medium diced dill pickles, 1 cup drained sauerkraut, and 1/2 small minced red onion.

Add the oil-coated red beets, remaining unrefined sunflower oil, 1 tbsp apple cider vinegar, 1/2 tsp salt, and 1/4 tsp black pepper.

Gently mix all ingredients until uniform, then cover and chill for at least 30 minutes before serving.
