Yachnevaya Kasha
A comforting Russian porridge made from finely crushed barley groats simmered in milk and water. It cooks up creamy, delicate, and is finished with a knob of butter.
Ingredients
- 1 cup crushed barley groats
- 2 cups water
- 2 cups whole milk
- 1/2 tsp fine sea salt
- 1 tbsp granulated sugar
- 3 tbsp unsalted butter, sliced

Toast 1 cup crushed barley groats in a dry saucepan over medium heat for 2 to 3 minutes until fragrant.

Pour in 2 cups water and 2 cups whole milk, then stir in 1/2 tsp fine sea salt and 1 tbsp granulated sugar.

Bring to a boil, then reduce heat to low, cover, and cook for 20 minutes until tender.

Stir in 3 tbsp sliced unsalted butter, cover the pot, and let rest off heat for 5 minutes before serving.
