Ingredients

  • 2 fresh limes, juiced
  • 20 fresh mint leaves
  • 2 tbsp simple syrup
  • 2 cups sparkling water or club soda
  • 2 cups crushed ice, crushed
  • 4 lime wedges (for garnish)

Instructions

    Divide 20 fresh mint leaves between two glasses. Add 2 tbsp simple syrup and muddle firmly for 30 seconds to release the mint oils.

    Squeeze the juice of 2 juiced fresh limes over the muddled mint. Stir briefly to combine.

    Fill each glass with 2 cups crushed crushed ice.

    Top each glass with 2 cups sparkling water or club soda and stir gently once to combine.

    Garnish with 4 lime wedges (for garnish) and a sprig of fresh mint. Serve immediately.
