Yuca con Mojo
Tender cassava root boiled until soft and smothered in a fragrant garlic and citrus sauce.
Ingredients
- 2 lbs fresh or frozen yuca, peeled, cut
- 2 tsp salt
- 1/2 cup extra virgin olive oil
- 8 garlic cloves, minced
- 1 white onion, sliced
- 1/2 cup sour orange juice

Place 2 lbs peeled, cut fresh or frozen yuca in a large pot with 2 tsp salt and cover with cold water by two inches.

Bring to a boil over high heat, then reduce to medium and simmer for 20 minutes until tender.

Heat 1/2 cup extra virgin olive oil in a skillet over medium heat, then add 8 minced garlic cloves and 1 sliced white onion and cook for 2 minutes until fragrant.

Whisk in 1/2 cup sour orange juice and remove the skillet from the heat.

Drain the boiled fresh or frozen yuca, transfer to a platter, and pour the hot mojo sauce over it.
