Ajiaco Cubano
A traditional Cuban stew packed with pork, beef, root vegetables, and sweet corn simmered in a savory broth.
Ingredients
- 2 tbsp olive oil
- 1.5 lbs pork shoulder, cubed
- 1 lb beef flank steak, cubed
- 1 yellow onion, diced
- 1 green bell pepper, diced
- 4 garlic cloves, minced
- 2 tbsp tomato paste
- 6 cups beef broth
- 1 lb yuca root, chopped
- 1 lb malanga root, chopped
- 1 lb calabaza squash, cubed
- 2 corn ears, cut in rounds
- 2 tbsp lime juice

Heat 2 tbsp olive oil in a large stockpot over medium-high heat.

Add 1.5 lbs cubed pork shoulder and 1 lb cubed beef flank steak, cooking for 8 minutes until browned on all sides and pork reaches an internal temperature of 145°F.

Add 1 diced yellow onion, 1 diced green bell pepper, and 4 minced garlic cloves, stirring for 5 minutes until soft.

Stir in 2 tbsp tomato paste, then pour in 6 cups beef broth and bring to a simmer.

Add 1 lb chopped yuca root, 1 lb chopped malanga root, 1 lb cubed calabaza squash, and 2 cut in rounds corn ears to the pot.

Cover and simmer for 35 minutes until all root vegetables are tender.

Stir in 2 tbsp lime juice before serving warm.
