  • 6 cups beef broth
  • 1 lb yuca root, chopped
  • 1 lb malanga root, chopped
  • 1 lb calabaza squash, cubed
  • 2 corn ears, cut in rounds
  • 2 tbsp lime juice

Instructions

    Heat 2 tbsp olive oil in a large stockpot over medium-high heat.

    Add 1.5 lbs cubed pork shoulder and 1 lb cubed beef flank steak, cooking for 8 minutes until browned on all sides and pork reaches an internal temperature of 145°F.

    Add 1 diced yellow onion, 1 diced green bell pepper, and 4 minced garlic cloves, stirring for 5 minutes until soft.

    Stir in 2 tbsp tomato paste, then pour in 6 cups beef broth and bring to a simmer.
