Semolina Dumpling Soup
A traditional German broth soup featuring tender semolina dumplings seasoned with nutmeg. Served hot with fresh chives for a light and comforting meal.
Ingredients
- 3 tbsp unsalted butter, softened
- 2 egg, beaten
- 2/3 cup fine semolina
- 1/4 tsp ground nutmeg
- 1/2 tsp fine salt
- 6 cups beef broth
- 2 tbsp fresh chives, chopped

Beat 3 tbsp softened unsalted butter in a bowl until creamy, then stir in 2 beaten egg.

Stir in 2/3 cup fine semolina, 1/4 tsp ground nutmeg, and 1/2 tsp fine salt until smooth, then rest dough for 15 minutes.

Bring 6 cups beef broth to a simmer in a saucepan over medium heat.

Shape dumpling mixture into small ovals using two spoons and drop into simmering liquid.

Cover pot and simmer gently on low heat for 15 minutes until dumplings expand and cook through.
