Beef Broth with Maultaschen
A classic Swabian dish featuring rich, simmered beef broth served with hearty stuffed pasta dumplings.
Ingredients
- 1 yellow onion, halved
- 2 lbs beef soup bones with meat
- 2 carrots, chopped
- 2 celery stalks, chopped
- 8 cups water
- 1 tsp salt
- 8 maultaschen dumplings, sliced
- 2 tbsp fresh chives, minced

Sear 1 halved yellow onion cut-side down in a dry pot over medium-high heat until deeply charred, about 5 minutes.

Add 2 lbs beef soup bones with meat, 2 chopped carrots, 2 chopped celery stalks, and 8 cups water to the pot and bring to a boil.

Reduce heat to low, skim off foam, add 1 tsp salt, and simmer uncovered for 2 hours until tender.

Strain the broth through a fine mesh sieve into a clean pot and discard solids.

Add 8 sliced maultaschen dumplings to the simmering broth and cook for 10 minutes until internal temperature reaches 165°F.

Ladle soup into bowls and garnish with 2 tbsp minced fresh chives.
