Instructions

    Heat 2 tbsp palm oil in a large pot over medium heat. Sauté 1/2 cup diced onion, 2 cloves minced garlic, and 1/4 tsp minced fresh ginger for 2 minutes until fragrant.

    Add 1 tsp paprika, 1/2 tsp ground cumin, 1/4 tsp dried thyme, and 1/8 tsp cayenne pepper. Toast for 30 seconds.

    Pour in 4 cups vegetable or fish broth and 14 oz canned diced tomatoes. Bring to a simmer.

    Add 8 oz cubed sweet potato and simmer for 15 minutes until tender.
