Ingredients

  • 1 pkg refrigerated pie crust (2-crust package), at room temp
  • 2 apples (such as Granny Smith or Honeycrisp), peeled, small dice
  • 3 tbsp light brown sugar, packed
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 2 tsp cornstarch
  • 2 tsp fresh lemon juice
  • 1 large egg, beaten with 1 tsp water
  • 1/4 cup powdered sugar
  • 2 tsp whole milk

Instructions

  1. 1

In a small bowl, toss 2 peeled, small dice apples (such as Granny Smith or Honeycrisp) with 3 tbsp light brown sugar, 1/2 tsp ground cinnamon, 1/4 tsp ground nutmeg, 2 tsp cornstarch, and 2 tsp fresh lemon juice. Let sit 5 minutes.

  2. 2

Unroll 1 pkg refrigerated pie crust (2-crust package) on a lightly floured surface. Cut into 4-inch circles (about 8 circles from a standard 2-crust package). Re-roll scraps as needed.

  3. 3

Place a heaping tablespoon of apple filling on one half of each dough circle, leaving a 1/2-inch border. Fold the dough over the filling and crimp the edges with a fork to seal. Cut two small slits on top of each pie.

  4. 4

Brush the tops with beaten with 1 tsp water large egg.

  5. 5

Preheat the air fryer to 375°F. Spray the basket with cooking spray and arrange the hand pies in a single layer. Air fry for 10 to 12 minutes until deep golden brown. Cook in batches if needed.

  6. 6

While the pies cool slightly, whisk 1/4 cup powdered sugar with 2 tsp whole milk to make a glaze. Drizzle over warm pies before serving.
