Ingredients

  • 6 large eggs
  • 6 oz breakfast sausage links or bulk (gluten-free verified), cooked, crumbled
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup heavy cream
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper, freshly ground
  • 1/4 tsp garlic powder
  • as needed nonstick cooking spray

Instructions

  1. 1

Preheat the air fryer to 300°F (150°C). Lightly coat a silicone egg-bite mold or silicone muffin tray (6-cup) with as needed nonstick cooking spray.

  2. 2

In a bowl, whisk together 6 large eggs, 1/4 cup heavy cream, 1/2 tsp kosher salt, 1/4 tsp freshly ground black pepper, and 1/4 tsp garlic powder until smooth and uniform.

  3. 3

Divide the 6 oz cooked, crumbled breakfast sausage links or bulk (gluten-free verified) evenly among the mold cups. Sprinkle 1/2 cup shredded cheddar cheese on top of the sausage in each cup.

  4. 4

Pour the egg mixture over the sausage and cheese in each cup, filling to about three-quarters full.

  5. 5

Place the mold in the air fryer basket. Cook at 300°F for 10 to 12 minutes, until the egg bites are set in the center and an internal temperature of 160°F (71°C) is reached.

  6. 6

Let the bites rest in the mold for 2 minutes, then pop them out with a small spatula. Serve immediately or refrigerate for up to 4 days.
