Ingredients

  • 2 cups unsalted mixed nuts (almonds, walnuts, pecans, cashews)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh rosemary, finely chopped
  • 1 tbsp fresh thyme leaves
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/8 tsp cayenne pepper
  • 1/2 tsp sea salt
  • 1/4 tsp freshly ground black pepper
  • 1 tsp pure maple syrup (optional)

Instructions

  1. 1

Preheat your air fryer to 320°F (160°C).

  2. 2

In a medium bowl, combine 2 cups unsalted mixed nuts (almonds, walnuts, pecans, cashews), 2 tbsp extra virgin olive oil, 1 tbsp finely chopped fresh rosemary, 1 tbsp fresh thyme leaves, 1/2 tsp garlic powder, 1/2 tsp smoked paprika, 1/8 tsp cayenne pepper, 1/2 tsp sea salt, 1/4 tsp freshly ground black pepper, and 1 tsp pure maple syrup (optional) if using.

  3. 3

Toss thoroughly to coat all the nuts evenly with the oil and seasoning mixture.

  4. 4

Transfer the seasoned nuts to the air fryer basket, spreading them out in a single layer. If your air fryer is small, you may need to roast in batches.

  5. 5

Air fry for 8-10 minutes, shaking the basket every 2-3 minutes to ensure even roasting.

  6. 6

Keep a close eye on the nuts during the last few minutes as they can quickly go from perfectly roasted to burnt due to their high fat content.

  7. 7

The nuts are done when they're fragrant and lightly browned but not dark brown.

  8. 8

Remove from the air fryer and let cool completely on a baking sheet or plate. They will continue to crisp as they cool.

  9. 9

Once cooled, transfer to an airtight container. These will keep at room temperature for up to 2 weeks.
