Air Fryer Herb Roasted Nuts
A savory, aromatic mix of nuts roasted to perfection in the air fryer with fresh herbs and spices. This protein-packed snack offers a delightful crunch and complex flavor profile.
Ingredients
- 2 cups unsalted mixed nuts (almonds, walnuts, pecans, cashews)
- 2 tbsp extra virgin olive oil
- 1 tbsp fresh rosemary, finely chopped
- 1 tbsp fresh thyme leaves
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/8 tsp cayenne pepper
- 1/2 tsp sea salt
- 1/4 tsp freshly ground black pepper
- 1 tsp pure maple syrup (optional)

Preheat your air fryer to 320°F (160°C).

In a medium bowl, combine 2 cups unsalted mixed nuts (almonds, walnuts, pecans, cashews), 2 tbsp extra virgin olive oil, 1 tbsp finely chopped fresh rosemary, 1 tbsp fresh thyme leaves, 1/2 tsp garlic powder, 1/2 tsp smoked paprika, 1/8 tsp cayenne pepper, 1/2 tsp sea salt, 1/4 tsp freshly ground black pepper, and 1 tsp pure maple syrup (optional) if using.

Toss thoroughly to coat all the nuts evenly with the oil and seasoning mixture.

Transfer the seasoned nuts to the air fryer basket, spreading them out in a single layer. If your air fryer is small, you may need to roast in batches.

Air fry for 8-10 minutes, shaking the basket every 2-3 minutes to ensure even roasting.

Keep a close eye on the nuts during the last few minutes as they can quickly go from perfectly roasted to burnt due to their high fat content.
