Asopao de Camarones
A comforting Dominican rice soup simmered with seasoned shrimp, fresh aromatics, and rich seafood broth.
Ingredients
- 1 lb raw shrimp, peeled
- 2 tbsp olive oil
- 1 small red onion, diced
- 1 green bell pepper, diced
- 4 garlic cloves, minced
- 2 tbsp tomato paste
- 1 cup long grain white rice
- 6 cups seafood stock
- 1 tsp dried oregano
- 2 tbsp lime juice
- 1/4 cup fresh cilantro, chopped

Heat 2 tbsp olive oil in a large pot over medium heat.

Add 1 small diced red onion, 1 diced green bell pepper, and 4 minced garlic cloves, sautéing for 5 minutes until softened.

Stir in 2 tbsp tomato paste and 1 tsp dried oregano, cooking for 1 minute until fragrant.

Add 1 cup long grain white rice and stir to coat with the vegetable mixture.

Pour in 6 cups seafood stock and bring to a simmer. Cover and cook on low for 15 minutes until rice is tender.

Stir in 1 lb peeled raw shrimp and cook for 4-5 minutes until pink, opaque, and an internal temperature of 145 degrees F is reached.

Remove from heat, stir in 2 tbsp lime juice and 1/4 cup chopped fresh cilantro, then serve immediately.
