Baked Eggs in Tomato Sauce
Fresh eggs gently poached in a rich, garlic-infused tomato sauce and finished with grated cheese and basil.
Ingredients
- 2 tbsp extra-virgin olive oil
- 1 small yellow onion, diced
- 2 garlic cloves, minced
- 28 oz can crushed tomatoes
- 1/2 tsp red pepper flakes
- 1/2 tsp fine sea salt
- 1/4 tsp black pepper, ground
- 4 large eggs
- 1/4 cup Parmesan cheese, grated
- 2 tbsp fresh basil, chiffonade

Preheat oven to 375 degrees F.

Heat 2 tbsp extra-virgin olive oil in a large oven-safe skillet over medium heat.

Add 1 small diced yellow onion and cook for 5 minutes until soft, then stir in 2 minced garlic cloves and 1/2 tsp red pepper flakes for 1 minute.

Pour in 28 oz can crushed tomatoes, season with 1/2 tsp fine sea salt and 1/4 tsp ground black pepper, and simmer for 10 minutes until thickened.

Make small wells in the sauce and crack 4 large eggs into the wells.

Sprinkle 1/4 cup grated Parmesan cheese over the sauce and bake for 10 to 12 minutes until whites are set.

Garnish with 2 tbsp chiffonade fresh basil before serving.
