Bistec a Caballo
Tender seasoned beef steak smothered in a flavorful tomato and onion sauce, finished with a sunny-side up fried egg on top.
Ingredients
- 2 lbs top sirloin steak, thinly sliced
- 4 garlic cloves, minced
- 1 yellow onion, thinly sliced
- 4 roma tomatoes, diced
- 1/2 tsp ground cumin
- 2 tbsp vegetable oil
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 4 large eggs

Season 2 lbs thinly sliced top sirloin steak with 4 minced garlic cloves, 1/2 tsp ground cumin, half of the 1 tsp kosher salt, and half of the 1/2 tsp black pepper.

Heat half of the 2 tbsp vegetable oil in a large skillet over medium-high heat.

Sear steak for 3 to 4 minutes per side until internal temperature reaches 145°F for medium, then transfer to a platter.

Add remaining 2 tbsp vegetable oil to the skillet, then stir in 1 thinly sliced yellow onion and 4 diced roma tomatoes with remaining 1 tsp kosher salt and 1/2 tsp black pepper.

Cook the tomato mixture for 5 to 6 minutes until softened into a rich sauce, then spoon over steak.

Fry 4 large eggs sunny-side up in the same skillet and place one fried egg on top of each portion of steak.
