Buñuelos Colombianos
Golden fried cheese fritters made with fresh mozzarella and potato starch. A beloved Colombian appetizer and street snack served warm and often enjoyed with a sweet drink or fruit.
Ingredients
- 12 oz fresh mozzarella cheese, cubed
- 1/2 cup potato starch
- 2 large eggs
- 1/4 tsp salt
- 1/8 tsp black pepper
- 2 cups vegetable oil

In a large bowl, beat 2 large eggs until well combined.

Add 1/2 cup potato starch, 1/4 tsp salt, and 1/8 tsp black pepper to the eggs and mix until a thick batter forms.

Fold 12 oz fresh mozzarella cheese cubed gently into the batter until evenly coated.

Heat 2 cups vegetable oil in a deep pot to 350°F.

Using a spoon or small ice cream scoop, carefully drop batter balls into the hot oil, working in batches to avoid overcrowding.

Fry for 2-3 minutes until golden brown on all sides, turning occasionally with a slotted spoon.

Remove with a slotted spoon and drain on paper towels.
