  • 2 lbs potato, boiled
  • 1 tbsp butter
  • 1/2 cup mozzarella cheese, cubed
  • 2 eggs egg
  • 1/2 cup breadcrumbs
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 2 cups vegetable oil (for frying)
  • 1/4 cup yellow onion, minced
  • 2 tbsp fresh cilantro, chopped

Instructions

    Form 24 croquettes: take 1 tbsp of mixture, place a 1/2 cup cubed mozzarella cheese in the center, and wrap the potato around it. Roll into a cylinder.

    Beat 2 eggs egg in a bowl. Place 1/2 cup breadcrumbs in another bowl.

    Dip each croquette in egg, then roll in breadcrumbs, coating evenly.
