Patacones
Twice-fried green plantain slices that are crispy on the outside and tender within. A beloved Colombian and Caribbean side dish.
Ingredients
- 4 medium green plantains
- 2 cups vegetable oil
- 1/2 tsp salt
- 1/4 tsp garlic salt

Peel the 4 medium green plantains and cut into 1-inch thick rounds.

Heat 2 cups vegetable oil in a deep pot or skillet to 375°F.

Fry 4 medium green plantains in batches for about 3-4 minutes until slightly softened but still firm.

Remove and drain on paper towels. Once cool enough to handle, press each slice flat using a green plantains press or the bottom of a glass.

Reheat 2 cups vegetable oil to 375°F and fry pressed green plantains again for 2-3 minutes until golden and crispy on both sides.

Drain on paper towels and season immediately with 1/2 tsp salt and 1/4 tsp garlic salt.

Serve hot as a side dish.
