Creamy broad bean and meat stew with warming spices. A beloved Tunisian comfort dish that's hearty, earthy, and deeply satisfying.
Ingredients
- 1 lb lamb shoulder, cubed
- 2 tbsp olive oil
- 1/2 onion, sliced
- 2 cloves garlic, minced
- 1 tbsp harissa paste
- 2 cups frozen broad beans, thawed
- 2 cups vegetable broth
- 1/4 tsp caraway seeds
- 1/4 tsp ground coriander
- 1/4 tsp salt

Heat 2 tbsp olive oil in a large pot over medium-high heat.

Add 1 lb cubed lamb shoulder and brown on all sides, about 5 minutes. Remove and set aside.

In the same pot, cook 1/2 sliced onion until softened, about 4 minutes.

Add 2 cloves minced garlic and cook for 30 seconds.

Stir in 1 tbsp harissa paste and cook for 1 minute.

Return lamb to the pot. Add 2 cups thawed frozen broad beans, 2 cups vegetable broth, 1/4 tsp caraway seeds, 1/4 tsp ground coriander, and 1/4 tsp salt.

Bring to a boil, then reduce heat and simmer covered for 35 minutes until lamb is tender.

Internal temperature of lamb should reach 160°F. Serve hot with bread.
