Ingredients

  • 1 lb white fish fillets, cubed
  • 2 cups dry couscous
  • 3 tbsp extra virgin olive oil
  • 1 yellow onion, diced
  • 4 garlic cloves, minced
  • 2 tbsp harissa paste
  • 2 tbsp tomato paste
  • 2 carrots, sliced
  • 2 Yukon Gold potatoes, cubed
  • 4 cups fish stock
  • 1 tsp ground cumin
  • 1/2 tsp ground caraway
  • 1 tsp salt

Instructions

    Heat 3 tbsp extra virgin olive oil in a deep pot over medium heat, then add 1 diced yellow onion and 4 minced garlic cloves and cook for 4 minutes until softened.

    Stir in 2 tbsp harissa paste, 2 tbsp tomato paste, 1 tsp ground cumin, 1/2 tsp ground caraway, and 1 tsp salt and cook for 2 minutes until fragrant.

    Pour in 4 cups fish stock, add 2 sliced carrots and 2 cubed Yukon Gold potatoes, bring to a simmer, and cook for 15 minutes.

    Add 1 lb cubed white fish fillets to the simmering broth and cook for 8 minutes until the internal temperature reaches 145 degrees F.

    Steam 2 cups dry couscous separately using some of the hot broth until tender and fluffy.
