Borsch
A traditional beet broth soup with tender beef chuck, shredded cabbage, and aromatic root vegetables.
Ingredients
- 1.5 lbs beef chuck roast, cubed
- 10 cups water
- 2 cups red beets, grated
- 1 cup carrots, grated
- 1 cup yellow onion, diced
- 2 cups Yukon Gold potatoes, cubed
- 3 cups green cabbage, shredded
- 2 tbsp tomato paste
- 2 tbsp lemon juice
- 4 garlic cloves, minced
- 2 tbsp vegetable oil
- 1/4 cup fresh dill, chopped

In a large pot, bring 10 cups water and 1.5 lbs cubed beef chuck roast to a boil, then simmer for 50 minutes until meat internal temperature reaches 190°F and tender.

Heat 2 tbsp vegetable oil in a skillet over medium heat and sauté 1 cup diced yellow onion and 1 cup grated carrots for 5 minutes.

Stir 2 cups grated red beets, 2 tbsp tomato paste, and 2 tbsp lemon juice into the skillet and cook for 10 minutes.

Add 2 cups cubed Yukon Gold potatoes and 3 cups shredded green cabbage to the simmering broth and cook for 15 minutes.

Transfer cooked vegetables from skillet into the pot with 4 minced garlic cloves and cook for 5 minutes.

Garnish soup with 1/4 cup chopped fresh dill before serving.
