Botvinya
A traditional cold Russian herbal soup featuring leafy greens, tangy bread kvass, and poached salmon.
Ingredients
- 1 lb salmon fillets, cut in half
- 4 cups fresh sorrel, chopped
- 4 cups fresh spinach, chopped
- 2 cups beet greens, chopped
- 4 cups bread kvass
- 2 tbsp prepared horseradish
- 1 cup English cucumber, diced
- 1/4 cup fresh dill, minced
- 1/2 cup scallions, thinly sliced

Poach 1 lb cut in half salmon fillets in simmering water for 8 to 10 minutes until internal temperature reaches 145 degrees F, then chill and flake.

Steam 4 cups chopped fresh sorrel, 4 cups chopped fresh spinach, and 2 cups chopped beet greens for 3 minutes until wilted, then drain and cool.

In a large bowl, combine chilled 4 cups bread kvass and 2 tbsp prepared horseradish.

Stir the wilted greens, 1 cup diced English cucumber, 1/4 cup minced fresh dill, and 1/2 cup thinly sliced scallions into the kvass liquid.

Divide the chilled soup into bowls and top with flaked salmon fillets.
