Brik with Egg and Parsley
Crispy phyllo pastry triangles filled with egg, parsley, and capers, fried until golden and served with a squeeze of lemon.
Ingredients
- 8 phyllo sheets
- 4 eggs
- 1/2 cup fresh parsley, chopped
- 2 tbsp capers, drained
- 1/2 onion, minced
- 1/4 tsp salt
- 1/4 tsp black pepper
- 6 tbsp melted butter
- 2 cups vegetable oil (for frying)
- 1 lemon, cut into wedges

Beat 4 eggs in a bowl with 1/4 tsp salt, 1/4 tsp black pepper, and 1/2 minced onion. Fold in 1/2 cup chopped fresh parsley and 2 tbsp drained capers.

Lay out one 8 phyllo sheets sheet on a clean surface. Brush lightly with 6 tbsp melted butter.

Place 1 tablespoon of the eggs mixture in the center of the sheet near the bottom.

Fold the bottom corner up over the filling, then fold in the two side corners, and finally fold the top corner down to form a triangle.

Heat 2 cups vegetable oil (for frying) in a shallow skillet to 350°F.

Carefully place the brik in the hot oil and fry 2-3 minutes on each side until golden and crispy.

Transfer to a paper towel-lined plate to drain.

Serve warm with 1 cut into wedges lemon on the side.
