Chorba Bayda
A comforting Algerian white chicken soup flavored with cinnamon, lemons, soft chickpeas, and fine vermicelli noodles.
Ingredients
- 2 tbsp vegetable oil
- 1 lb chicken breast, diced
- 1 head yellow onion, grated
- 1 cinnamon stick
- 1/2 tsp ground black pepper
- 1 tsp fine salt
- 5 cups chicken broth
- 1 cup canned chickpeas, drained
- 1/2 cup vermicelli pasta, broken
- 1 egg yolk
- 2 tbsp fresh lemon juice
- 1/4 cup flat-leaf parsley, chopped

Heat 2 tbsp vegetable oil in a large pot over medium heat.

Add 1 lb diced chicken breast, 1 head grated yellow onion, 1 cinnamon stick, 1/2 tsp ground black pepper, and 1 tsp fine salt, cooking for 8 minutes until chicken is opaque.

Pour in 5 cups chicken broth and 1 cup drained canned chickpeas, bring to a boil, then reduce heat and simmer covered for 15 minutes.

Check that chicken reaches an internal temperature of 165°F (74°C).

Stir in 1/2 cup broken vermicelli pasta and cook uncovered for 5 minutes until tender.

Whisk 1 egg yolk, 2 tbsp fresh lemon juice, and half of the 1/4 cup chopped flat-leaf parsley with a ladle of hot broth in a small bowl.

Remove pot from heat, slowly stir the egg mixture into soup to thicken, then garnish with remaining chopped flat-leaf parsley.
