Cajun Turkey and Rice Soup
A hearty soup featuring shredded turkey, long grain rice, and the traditional Cajun holy trinity in a spiced broth.
Ingredients
- 2 tbsp vegetable oil
- 1 cup yellow onion, diced
- 1 cup green bell pepper, diced
- 1 cup celery stalks, diced
- 4 garlic cloves, minced
- 2 tbsp Cajun seasoning
- 6 cups low-sodium chicken broth
- 1 cup long grain white rice, rinsed
- 2 bay leaf
- 3 cups cooked turkey, shredded

Heat 2 tbsp vegetable oil in a large pot over medium heat.

Add 1 cup diced yellow onion, 1 cup diced green bell pepper, and 1 cup diced celery stalks, cooking for 6 minutes until softened.

Stir in 4 minced garlic cloves and 2 tbsp Cajun seasoning, cooking for 1 minute until fragrant.

Pour in 6 cups low-sodium chicken broth, then add 1 cup rinsed long grain white rice and 2 bay leaf, bringing the mixture to a boil.

Reduce heat to low, cover, and simmer for 15 minutes until the rice is tender.

Stir in 3 cups shredded cooked turkey and simmer uncovered for 5 minutes until turkey reaches an internal temperature of 165 F, then discard 2 bay leaf before serving.
