Corn and Sausage Soup
A rich Cajun soup featuring sweet corn kernels, smoked sausage, and aromatic holy trinity vegetables in a creamy broth.
Ingredients
- 12 oz andouille sausage, sliced
- 2 tbsp unsalted butter
- 1 cup yellow onion, diced
- 1 cup green bell pepper, diced
- 1/2 cup celery, diced
- 3 cloves garlic, minced
- 1 tbsp Cajun seasoning
- 4 cups sweet corn kernels
- 4 cups chicken broth
- 1/2 cup heavy cream
- 1/4 cup green onions, sliced

Melt 2 tbsp unsalted butter in a large Dutch oven over medium heat.

Add 12 oz sliced andouille sausage and cook until browned and internal temperature reaches 165 F, about 5 minutes.

Add 1 cup diced yellow onion, 1 cup diced green bell pepper, and 1/2 cup diced celery, stirring occasionally until soft, about 6 minutes.

Stir in 3 cloves minced garlic and 1 tbsp Cajun seasoning, cooking until fragrant, about 1 minute.

Pour in 4 cups chicken broth and 4 cups sweet corn kernels, bringing the mixture to a gentle boil.
