Cajun Twice-Baked Potatoes
Fluffy potato shells filled with a creamy, spiced mashed potato blend, smoky andouille sausage, melted cheddar, and green onions.
Ingredients
- 4 large Russet potatoes, scrubbed
- 1 cup cooked andouille sausage, finely diced
- 1/4 cup unsalted butter, softened
- 1/2 cup sour cream
- 2 tsp Cajun seasoning
- 1 cup sharp cheddar cheese, shredded
- 1/4 cup green onions, thinly sliced

Preheat oven to 400 degrees Fahrenheit. Prick 4 large scrubbed Russet potatoes with a fork and bake directly on the oven rack for 60 minutes until tender.

Heat a small skillet over medium heat, saute 1 cup finely diced cooked andouille sausage for 5 minutes until browned, and verify the internal temperature reaches 165 degrees Fahrenheit.

Cut baked potatoes in half lengthwise, scoop pulp into a mixing bowl leaving a sturdy shell, and mash with 1/4 cup softened unsalted butter, 1/2 cup sour cream, and 2 tsp Cajun seasoning.

Fold browned sausage, half of the 1 cup shredded sharp cheddar cheese, and half of the 1/4 cup thinly sliced green onions into the potato mixture.

Spoon filling evenly back into potato shells, top with remaining sharp cheddar cheese, and bake at 400 degrees Fahrenheit for 15 minutes until cheese melts.
