Collard Greens with Tasso

- 8 oz tasso ham, diced
- 2 tbsp vegetable oil
- 1 medium yellow onion, diced
- 4 garlic cloves, minced
- 2 lbs fresh collard greens, chopped
- 4 cups chicken broth
- 2 tbsp apple cider vinegar
- 1 tsp hot sauce

Heat 2 tbsp vegetable oil in a large heavy pot over medium heat.

Add 8 oz diced tasso ham and cook for 5 minutes until browned and fragrant, ensuring pork reaches 145 degrees F.

Add 1 medium diced yellow onion and 4 minced garlic cloves, cooking for 4 minutes until softened.
