Corn Maque Choux
A traditional Southern Louisiana side dish featuring sweet corn sauteed with crisp bacon, holy trinity vegetables, Cajun spices, and cream.
Ingredients
- 4 slices bacon, chopped
- 2 tbsp unsalted butter
- 1 cup yellow onion, diced
- 1/2 cup green bell pepper, diced
- 1/2 cup celery, diced
- 2 tsp garlic, minced
- 4 cups sweet corn kernels
- 1 tsp Cajun seasoning
- 1/4 cup heavy cream
- 1/4 cup green onions, sliced

In a skillet over medium heat, render 4 slices chopped bacon until crisp and reaching an internal temperature of 160F, then remove with a slotted spoon.

Melt 2 tbsp unsalted butter into the skillet with the reserved bacon grease.

Add 1 cup diced yellow onion, 1/2 cup diced green bell pepper, and 1/2 cup diced celery, sauteing for 5 minutes until soft.

Stir in 2 tsp minced garlic, 4 cups sweet corn kernels, and 1 tsp Cajun seasoning, cooking for 8 minutes until corn is tender.

Pour in 1/4 cup heavy cream and simmer for 3 minutes until mixture is creamy.

Fold in reserved bacon and top with 1/4 cup sliced green onions before serving.
