Chicken Gyros
Juicy marinated chicken thighs seasoned with classic Greek spices, served in warm pita bread with creamy tzatziki, fresh tomato, and red onion.
Ingredients
- 2 lbs boneless skinless chicken thighs
- 1/4 cup olive oil
- 2 tbsp fresh lemon juice
- 4 cloves garlic cloves, minced
- 1 tsp dried oregano
- 1/2 tsp ground cumin
- 1/2 tsp smoked paprika
- 1 tsp kosher salt
- 1/2 tsp black pepper, freshly ground
- 4 pita bread rounds
- 1 cup tzatziki sauce (store-bought or homemade)
- 2 Roma tomato, thinly sliced
- 1/2 small red onion, thinly sliced

In a bowl, whisk together 1/4 cup olive oil, 2 tbsp fresh lemon juice, 4 cloves minced garlic cloves, 1 tsp dried oregano, 1/2 tsp ground cumin, 1/2 tsp smoked paprika, 1 tsp kosher salt, and 1/2 tsp freshly ground black pepper to make the marinade.

Add 2 lbs boneless skinless chicken thighs to the marinade, turning to coat thoroughly. Cover and refrigerate for at least 30 minutes, or up to 8 hours for deeper flavor.

Heat a grill pan or skillet over medium-high heat. Remove the chicken from the marinade and cook for 6-7 minutes per side, until charred at the edges and the internal temperature reaches 165°F (74°C).

Transfer the cooked chicken to a cutting board and let it rest for 5 minutes, then slice thinly across the grain.

Warm 4 pita bread rounds in a dry skillet or directly on the grill for about 30 seconds per side.

Spread 1 cup tzatziki sauce (store-bought or homemade) over each warm pita. Top with sliced chicken, 2 thinly sliced Roma tomato, and 1/2 small thinly sliced red onion. Fold and serve immediately.
