Fresh and vibrant Mediterranean salad with cucumbers, tomatoes, olives, and feta cheese in a lemon-oregano dressing.
Ingredients
- 1 cucumber, diced
- 2 tomatoes, diced
- 1/2 red onion, thinly sliced
- 1 green bell pepper, diced
- 1/2 cup kalamata olives, pitted
- 1/2 cup feta cheese, crumbled
- 1/4 cup extra virgin olive oil
- 2 tbsp lemon juice, fresh
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp black pepper

In a large bowl, combine 1 diced cucumber, 2 diced tomatoes, 1/2 thinly sliced red onion, 1 diced green bell pepper, and 1/2 cup pitted kalamata olives.

In a small bowl, whisk together 1/4 cup extra virgin olive oil, 2 tbsp fresh lemon juice, 1 tsp dried oregano, 1/2 tsp salt, and 1/2 tsp black pepper.
