Fish Youvetsi
White fish baked with orzo pasta, fresh tomatoes, and aromatic herbs. A warm, comforting Greek dish with tender fish and silky pasta.
Ingredients
- 2.5 lbs white fish fillets (cod, sea bass, or halibut)
- 2 cups orzo pasta
- 1 can diced tomatoes (28 oz can)
- 3 cups fish or vegetable broth
- 1 onion, diced, diced
- 4 cloves garlic, minced, minced
- 3 tbsp olive oil
- 2 tsp dried oregano
- 1/4 cup fresh parsley, chopped, chopped
- 3 tbsp fresh lemon juice
- to taste salt and black pepper

Preheat oven to 400°F.

Heat 3 tbsp olive oil in a large baking dish over medium heat. Sauté 1 diced onion, diced and 4 cloves minced garlic, minced until softened, about 3 minutes.

Add 2 cups orzo pasta and cook for 2 minutes, stirring occasionally, until lightly toasted.

Stir in 1 can diced tomatoes (28 oz can) and 3 cups fish or vegetable broth. Bring to a simmer.

Season 2.5 lbs white fish fillets (cod, sea bass, or halibut) with to taste salt and black pepper. Nestle 2.5 lbs white fish fillets (cod, sea bass, or halibut) into the orzo mixture.

Drizzle 2.5 lbs white fish fillets (cod, sea bass, or halibut) with 3 tbsp fresh lemon juice and sprinkle with 2 tsp dried oregano.

Bake uncovered for 20-25 minutes until 2.5 lbs white fish fillets (cod, sea bass, or halibut) flakes easily with a fork and orzo is tender. Internal temperature should reach 145°F.

Remove from oven, garnish with 1/4 cup chopped fresh parsley, chopped, and serve immediately.
