Frappe (Greek Iced Coffee)

A beloved Greek summer staple made by shaking instant coffee with a splash of water into a thick, long-lasting foam, then poured over ice and finished with cold water and optional milk.

Ingredients

  • 2 tsp instant coffee (Nescafe Classic recommended)
  • 2 tsp granulated sugar
  • 2 tbsp cold water (for foam)
  • 10 cubes ice cubes
  • 1/3 cup cold water (to fill glass)
  • 1/4 cup whole or evaporated milk (optional)

Instructions

    Combine 2 tsp instant coffee (Nescafe Classic recommended), 2 tsp granulated sugar, and 2 tbsp cold water (for foam) in a cocktail shaker, a tall jar with a tight lid, or a milk frother. Shake or froth vigorously for 30-60 seconds until a thick, pale caramel-colored foam forms.

    Fill a tall glass with 10 cubes ice cubes.

    Pour the foam over the ice — it will settle on top.

    Add 1/3 cup cold water (to fill glass) to fill the glass. If desired, pour 1/4 cup whole or evaporated milk (optional) over the top. Serve with a straw and stir lightly before drinking.
