Cold Skin Noodles
Tender, chewy steamed starch noodles tossed with a garlic vinegar chili dressing and fresh cucumber.
Ingredients
- 1.5 cups wheat starch
- 1/4 cup tapioca starch
- 1/2 tsp salt
- 2 cups water
- 2 tbsp vegetable oil
- 4 garlic cloves, minced
- 2 tbsp soy sauce
- 2 tbsp Chinkiang vinegar
- 2 tbsp chili oil
- 2 tsp sesame oil
- 1 cucumber, julienned

In a large bowl, whisk together 1.5 cups wheat starch, 1/4 cup tapioca starch, 1/2 tsp salt, and 2 cups water until completely smooth.

Set a steamer setup over high heat and grease a flat-bottomed metal pie pan with a small amount of 2 tbsp vegetable oil.

Pour a thin layer of starch mixture into the pan and steam covered for 2 to 3 minutes until translucent and bubbled.

Remove pan, submerge the bottom in cold water to cool, brush the top with 2 tbsp vegetable oil, and peel the noodle sheet.

Repeat for remaining batter, slice sheets into wide strips, and place noodles in a serving bowl.

In a small bowl, combine 4 minced garlic cloves, 2 tbsp soy sauce, 2 tbsp Chinkiang vinegar, 2 tbsp chili oil, and 2 tsp sesame oil.

Toss noodles with the sauce mixture and top with 1 julienned cucumber before serving chilled.
