Dubu Salad (Tofu Salad with Sesame Dressing)
A fresh Korean salad of silken or firm tofu layered over crisp lettuce and cucumbers, finished with a savory sesame-soy dressing and crunchy garnishes.
Ingredients
- 14 oz firm or silken tofu, cubed or sliced
- 4 cups romaine or green leaf lettuce, torn
- 1 English cucumber, thinly sliced
- 1 carrot, julienned
- 2 tbsp soy sauce
- 2 tbsp toasted sesame oil
- 2 tbsp rice vinegar
- 2 tsp granulated sugar
- 2 cloves garlic, minced
- 1 tsp gochugaru (Korean red pepper flakes)
- 2 scallions, thinly sliced
- 2 tsp sesame seeds, toasted

In a small bowl, whisk together 2 tbsp soy sauce, 2 tbsp toasted sesame oil, 2 tbsp rice vinegar, 2 tsp granulated sugar, 2 cloves minced garlic, and 1 tsp gochugaru (Korean red pepper flakes) until the sugar dissolves. Set dressing aside.

Arrange 4 cups torn romaine or green leaf lettuce on a large serving platter or in individual bowls. Layer 1 thinly sliced English cucumber and 1 julienned carrot over the lettuce.

Place 14 oz cubed or sliced firm or silken tofu on top of the vegetables.

Drizzle the sesame dressing over the entire salad. Scatter 2 thinly sliced scallions and 2 tsp toasted sesame seeds on top and serve immediately.
