Empanadas Puertorriquenas
Fried hand pies with seasoned beef and potato filling, golden and crispy on the outside with savory meat filling inside. A Puerto Rican favorite and popular street food.
Ingredients
- 3 cups all-purpose flour
- 1/2 tsp salt
- 1/2 tsp baking powder
- 6 tbsp butter
- 1/2 cup warm water
- 1 lb ground beef
- 2 tbsp olive oil
- 1/2 onion, diced
- 2 garlic cloves, minced
- 1 potato, diced small
- 2 tbsp sofrito
- 1/4 cup green olives
- 2 tbsp raisins
- 1/4 tsp oregano
- 1/4 tsp cumin
- 1/2 tsp salt
- 3 cups vegetable oil for frying

Mix 3 cups all-purpose flour, 1/2 tsp salt, 1/2 tsp baking powder.

Cut in 6 tbsp butter until breadcrumb texture.

Add 1/2 cup warm water gradually, mix until soft dough. Rest 10 min.

Heat 2 tbsp olive oil. Brown 1 lb ground beef, 5 minutes.

Add 1/2 diced onion, 2 minced garlic cloves, sauté 2 min.

Stir in 2 tbsp sofrito, 1/4 tsp oregano, 1/4 tsp cumin. Cook 1 min.

Add 1 diced small potato, cook until tender.

Stir in 1/4 cup green olives, 2 tbsp raisins. Season with salt.

Cool filling completely.

Roll dough thin, cut into 3-inch circles.

Fill each with 1 tbsp filling, fold and seal.

Fry in oil at 350 degrees until golden, 2-3 min per side.

Drain and serve hot.
