Empanaditas de Pollo
Mini golden pastries filled with a savory Cuban-style chicken sofrito. Deep-fried until crunchy for a handheld snack or party appetizer.
Ingredients
- 2 cups cooked chicken breast, shredded
- 2 tbsp olive oil
- 1 cup yellow onion, diced
- 1/2 cup green bell pepper, diced
- 4 garlic cloves, minced
- 1/2 cup tomato sauce
- 1 tsp ground cumin
- 1/2 tsp salt
- 12 mini empanada dough discs
- 2 cups vegetable oil

Heat 2 tbsp olive oil in a skillet over medium heat.

Add 1 cup diced yellow onion, 1/2 cup diced green bell pepper, and 4 minced garlic cloves, cooking for 5 minutes until soft.

Stir in 2 cups shredded cooked chicken breast, 1/2 cup tomato sauce, 1 tsp ground cumin, and 1/2 tsp salt. Cook for 5 minutes until filling reaches an internal temperature of 165°F, then cool slightly.

Place a tablespoon of chicken mixture on each of the 12 mini empanada dough discs, fold in half, and crimp edges with a fork to seal.

Heat 2 cups vegetable oil in a deep pan to 350°F and fry empanaditas for 2 to 3 minutes per side until golden brown.
