Fried Green Plantains
Thick slices of firm green plantains fried until crispy golden and served with garlicky mojo sauce. A Cuban favorite side dish.
Ingredients
- 4 green plantains, peeled and cut into 1 inch thick slices
- 2 cups vegetable oil (for frying)
- to taste salt
- 4 garlic cloves, minced
- 4 tbsp olive oil (for mojo)
- 2 tbsp fresh lime juice
- 1/4 tsp salt (for mojo)

Heat 2 cups vegetable oil (for frying) in a deep skillet or deep fryer to 350°F.

Carefully place 4 peeled and cut into 1 inch thick slices green plantains in the hot oil in batches, being careful not to overcrowd.

Fry for 4-5 minutes per side until golden brown and crispy. Drain on paper towels.

Immediately sprinkle with to taste salt while still hot.

To make the mojo sauce, combine 4 minced garlic cloves, 4 tbsp olive oil (for mojo), 2 tbsp fresh lime juice, and 1/4 tsp salt (for mojo).

Arrange plantains on a serving platter and drizzle generously with the mojo sauce.

Serve warm as a side dish.
