Gidosoupa
A traditional Greek goat soup simmered slowly in a light, citrus-infused broth with fresh root vegetables.
Ingredients
- 3 lbs goat meat with bones, cut in pieces
- 8 cups water
- 1/4 cup extra virgin olive oil
- 1 yellow onion, chopped
- 4 carrots, sliced
- 4 Yukon Gold potatoes, cubed
- 2 celery stalks, chopped
- 1/4 cup fresh lemon juice
- 2 tsp salt
- 1/2 tsp ground black pepper

Place 3 lbs cut in pieces goat meat with bones and 8 cups water in a large pot and bring to a boil over medium-high heat.

Skim off any foam from the surface, reduce heat to low, cover, and simmer for 60 minutes.

Add 1/4 cup extra virgin olive oil, 1 chopped yellow onion, 4 sliced carrots, 4 cubed Yukon Gold potatoes, 2 chopped celery stalks, 2 tsp salt, and 1/2 tsp ground black pepper to the pot.

Cover and simmer for 40 minutes until the meat is tender and reaches an internal temperature of 160 F.

Stir in 1/4 cup fresh lemon juice, adjust seasoning if needed, and remove from heat before serving.
