Freekeh with Pomegranate and Herbs
Smoky roasted green wheat grain tossed with tart pomegranate molasses, fresh herbs, and jewel-like pomegranate seeds. Nutty, tangy, and perfectly balanced.
Ingredients
- 1.5 cups freekeh (roasted green wheat)
- 3 cups vegetable broth
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp pomegranate molasses
- 1/4 cup pomegranate seeds (fresh)
- 3 tbsp fresh mint, chopped
- 3 tbsp fresh parsley, chopped
- 1 tbsp lemon juice
- 1/2 shallot, thinly sliced
- 2 tbsp pomegranate seeds (for garnish)

Rinse 1.5 cups freekeh (roasted green wheat) under cold water and drain.

Heat 2 tbsp olive oil in a large pot over medium heat. Toast freekeh for 2-3 minutes, stirring occasionally.

Add 3 cups vegetable broth, 1/2 tsp salt, and 1/4 tsp black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes until freekeh is tender and liquid is absorbed.

Stir in 2 tbsp pomegranate molasses and 1 tbsp lemon juice.

Remove from heat and gently fold in 3 tbsp chopped fresh mint, 3 tbsp chopped fresh parsley, 1/2 thinly sliced shallot, and 1/4 cup pomegranate seeds (fresh).

Transfer to a serving dish and garnish with additional pomegranate seeds and mint. Serve warm or at room temperature.
