Ingredients

  • 1 cup cracked freekeh
  • 2.5 cups water
  • 1/2 tsp kosher salt
  • 2 Persian cucumbers, diced
  • 1 cup flat-leaf parsley, chopped
  • 1/2 cup pomegranate seeds
  • 3 tbsp extra virgin olive oil
  • 2 tbsp lemon juice

Instructions

    Bring 2.5 cups water and 1/2 tsp kosher salt to a boil in a medium saucepan.

    Stir in 1 cup cracked freekeh, cover, reduce heat to low, and simmer for 20 minutes until tender.
