Sabich
Israeli street food sandwich filled with roasted eggplant, hard-boiled eggs, tomatoes, cucumbers, and tahini sauce. Crispy, creamy, and utterly delicious.
Ingredients
- 1 large eggplant, sliced into 1/4-inch rounds
- 3 tbsp olive oil (for roasting)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 large eggs, hard-boiled, sliced
- 1/4 cup tahini paste
- 2 tbsp lemon juice
- 1 clove garlic, minced
- 3 tbsp warm water
- 4 pita bread, warmed
- 1 tomato, sliced
- 1/2 cucumber, sliced

Preheat oven to 425°F.

Arrange 1 large sliced into 1/4-inch rounds eggplant on baking sheets. Brush both sides with 3 tbsp olive oil (for roasting) and season with 1/2 tsp salt and 1/4 tsp black pepper.

Roast for 25-30 minutes, flipping halfway, until golden and soft.

While eggplant roasts, bring a pot of water to boil. Add 4 large eggs and cook for 10 minutes. Cool, peel, and slice.

Whisk 1/4 cup tahini paste with 2 tbsp lemon juice, 1 clove minced garlic, and 3 tbsp warm water until smooth and creamy.

Warm 4 pita and carefully open a pocket.

Layer roasted eggplant, sliced eggs, 1 sliced tomato, and 1/2 sliced cucumber inside each pita.

Drizzle generously with tahini sauce and serve immediately.
