Fresh Fig Cake
A tender, spiced cake filled with sweet fresh figs and warm cinnamon notes. This traditional Southern recipe yields a moist cake with rich natural sweetness.
Ingredients
- 2 cups fresh figs, chopped
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp salt
- 2 large eggs, beaten
- 1/2 cup vegetable oil
- 1 tsp vanilla extract
- 1/2 cup buttermilk

Preheat oven to 350 degrees F and grease a cake pan.

In a large bowl, whisk together 2 cups all-purpose flour, 1 cup granulated sugar, 1 tsp baking soda, 1 tsp ground cinnamon, 1/2 tsp ground nutmeg, and 1/2 tsp salt.

Add 2 beaten large eggs, 1/2 cup vegetable oil, 1 tsp vanilla extract, and 1/2 cup buttermilk to the dry ingredients, stirring until combined.
