Fried Alligator Bites
Crispy seasoned bite-sized pieces of tender alligator tail meat soaked in spicy buttermilk and deep fried until golden brown.
Ingredients
- 1 lb alligator tail meat, cubed
- 1 cup buttermilk
- 1 tbsp hot sauce
- 1 cup all-purpose flour
- 1/2 cup yellow cornmeal
- 1.5 tbsp Cajun seasoning
- 3 cups vegetable oil

In a bowl, combine 1 cup buttermilk, 1 tbsp hot sauce, and 1 lb cubed alligator tail meat, then soak for 30 minutes in the refrigerator.

In a separate bowl, whisk together 1 cup all-purpose flour, 1/2 cup yellow cornmeal, and 1.5 tbsp Cajun seasoning.

Heat 3 cups vegetable oil in a deep pot or heavy skillet to 350°F.

Remove alligator from the liquid, dredge thoroughly in the flour mixture, and shake off any excess.

Fry alligator pieces in batches for 3 to 4 minutes until golden brown and internal temperature reaches 160°F.
